Spring Fried Goat Cheese Salad
Ingredients:
4 cups mixed greens
1 cup cherry tomatoes, halved
1/2 cup sliced cucumbers
1/4 cup thinly sliced red onions
8 oz goat cheese, sliced into rounds
1/2 cup panko breadcrumbs
1 tsp dried thyme or rosemary
1 egg, beaten
Olive oil, for frying
Salt and pepper to taste
Strawberry Balsamic Vinaigrette:
1 tbsp maple syrup
4 tablespoons olive oil
2 tbsp balsamic vinegar
1 tsp Apple cider vinegar
1/2 cup chopped strawberries Salt and pepper
Add it all in a small bowl and mix it together until smooth!
Instructions:
1. In a large salad bowl, assemble the mixed greens, cherry tomatoes, sliced cucumbers, and red onions.
2. In a shallow dish, combine the breadcrumbs and dried thyme or rosemary. Dip each slice of goat cheese into the beaten egg, then coat it in the panko breadcrumb mixture, pressing gently to adhere.
3. Heat olive oil in a pan over medium heat. Fry the coated goat cheese slices for about 2-3 minutes on each side until golden brown and crispy. Remove from the pan and place them on a paper towel to drain excess oil.
4. In a small bowl, whisk together all of the vinaigrette ingredients until smooth!
5. Place the fried goat cheese slices on top of the salad and drizzle with the vinaigrette.
6. Serve immediately and enjoy the combination of warm, melty goat cheese with the refreshing salad and tangy dressing.
