The Dinner I’m Making When I Have Zero Energy

SHEET PAN CHICKEN SAUSAGE, SWEET POTATOES + APPLES

Nothing revolutionary happening here, guys.

I just need dinners that are easy, everyone will eat and don’t leave my kitchen looking like I used every pan we own.

This one checks the boxes.

YOU’LL NEED:

  • 12 to 14 oz fully cooked chicken sausage, sliced

  • 2 sweet potatoes, cubed

  • Brussels sprouts, halved

  • 1 apple, sliced

  • ½ red onion

  • Olive oil

  • Garlic powder

  • Salt + pepper

FOR THE MAPLE DIJON:

  • 1 tbsp Dijon

  • 1 tbsp maple syrup

  • 1 tbsp olive oil

  • Splash of apple cider vinegar

Roast the sweet potatoes, Brussels sprouts and onion at 425° for about 20 minutes.

Give everything a toss, add the sausage + apples and put it back in for another 15 to 20 minutes.

Mix together the maple Dijon and drizzle it over the top.

Serve it alone or over rice.

That’s it.

Minimal effort. Minimal cleanup. Everyone gets fed.
